Stuffed and baked peaches.....



Each week, a friend and I lunch together. One week at her house and one at mine. We both have fun trying out recipes on each other. I decided to create this dessert and wanted to note it in my blog as it turned out really well. My stuffed and baked peaches...

I crushed about 8 speculoos (Belgian version of our Dutch windmill cookies) cookies in a bowl then sprinkled a heaping tablespoon of cocoa powder over the large cookie crumbs.


Rub in two knobs of butter with fingers. You want a large crumble look. 


I had a jar of whole peaches but you can use halves as well. Fresh peaches would work too but you may need to bake them longer. Stuff the hole of the peach well with the crumble filling. Place them in a baking dish and sprinkle over some honey. Bake in an 180C/375F oven for about 25 minutes. 


Serve warm with vanilla ice cream and chocolate mocca beans or chocolate flakes. 

Note: I had so much filling that I was able to make 12 peaches total. You can make the filling and keep in a jar in the fridge to use as you need it.

Strawberry buttermilk

In Holland, buttermilk is very popular. It is something many drink with their lunchtime sandwiches. I normally do not drink it but when it is turned into strawberry buttermilk, it is simply delicious. You are able to buy 0% fat buttermilk here so see if you can buy something low fat to give yourself a wonderful and simple summertime treat.


Clean and puree a bowl of strawberries. This is not rocket science and I simply make it without measuring. I make this in a one liter (one quart) jug so ended up with about 300 ml (1 to 1-1/4 cup) strawberry puree.


Now simply pour in the buttermilk to fill your jug and mix well. Chill well and enjoy a very healthy treat!

Strawberry season!

Strawberry season has started with a vengeance. The weather suddenly turned from cold, grey and wet to very hot and sunny. Jos bought the first strawberries of the season on the way home from working for an afternoon in Germany. They were selling them at a roadside stand by a strawberry field. We enjoyed them with ice cream but I saved about a third of them for another treat...

Sorry but I started drinking it before I remembered to take a photo. *grins* Here is a strawberry banana smoothie. I just cut up the strawberries along with two ripe bananas and pureed them. They were such a tasty treat that was also full of vitamins.


Of course, perhaps this view of our garden as we sat and drank the smoothies does help make it taste that little bit better. We started this garden last year from patches of grass and uncared for plants. What a difference a year makes. I sit and have to pinch myself that it is really ours.
